Galuste cu prune de post. Plum Dumplings


Pentru ca de curand au aparut prunele si este sezonul lor, mi-a si venit ideea, sau mai bine zis pofta de a face galuste cu prune. In plus, aceasta reteta este si de post. In copilarie mama facea destul de des acest desert, insa eu le-am preparat pentru prima data. Singurul lucru care imi displacea era ca imi doream mai mult pesmet. Cand ai mei nu erau atenti, eu aveam grija sa ma servesc si din pesmetul lor. Dar mi-am luat revansa acum si am facut pesmet ca sa-mi ajunga. Si parca ar mai fi mers… Galustele imi plac cu mult, mult pesmet. Avem nevoie de:
  • 1,400 kg cartofi rosii (fainosi)
  • 1,160 kg prune
  • 450 gr faina
  • 2 + 5 linguri ulei
  • 750 gr pesmet
  • 250 gr zahar
  • 1 praf sare

Cum procedam:
Cartofii se curata de coaja si se pun la fiert intregi.
Intre timp, putem sa ne ocupam de pesmet: intr-o tigaie punem 5 linguri de ulei, peste care punem pesmetul. Amestecam continuu pentru ca acesta se arde repede. Cand am obtinut o culoare mai inchisa, stingem aragazul si adaugam zaharul, si amestecam pana la omogenizare.
 Scoatem samburii din prune si le presaram cu 2 linguri de zahar.
Dupa ce au fiert cartofii se lasa la racit. Cand acestia sunt reci, ii zdrobim cu ustensila specifa, deci nu folosim mixerul vertical pentru ca acesta distruge amidonul din cartofi. Dupa ce am facut pireul adaugam faina, treptat si framantam bine pana compozitia poate fi prelucrata. Chiar daca aluatul inca este lipicios, ne pudram mainile cu faina si masa pe care lucram, astfel incat formarea galustelor sa fie mai usoara. Aluatul obtinul il rulam si il portionam in parti egale. Luam cate o bucatica de aluat, o aplatizam si punem o pruna, apoi lipim cu grija, modelam intre maini pentru a da o forma cat mai rotunda. Galustele formate le punem in apa fierbinte dar nu clocotita si le fierbem pana ce acestea se ridica la suprafata. Le luam cu ajutorul unei palete cu gauri si le dam imediat (cat sunt fierbinti) prin pesmet. Este important ca galustele sa le punem in ture, nu toate deodata; la mine au incaput cate 9 – 10 bucati.
Din aceasta compozitie am obtinut 28 de galuste delicioase.

Plum Dumplings


Because it is the season of the plums, I had the idea, or rather the desire to make dumplings with plums. In addition, this recipe is a feast recipe (vegan). During my childhood my mother often made this meal, but I prepared it myself for the first time. The only thing I disliked was that I wanted more bread crumbs. When my parents were not paying attention, I tried to steal their breadcrumbs. But I got my revenge now I make all the breadcrumbs I want.... I love dumplings with lots of breadcrumbs.
We need:


  • 1.400 kg red potatoes (they are more farinaceous)
  • 1.160 kg plums
  • 450 gr flour
  • 2 + 5 tablespoons oil
  • 750 gr breadcrumbs
  • 250 g sugar
  • 1 pinch salt


How to proceed:
Peel potatoes and boil whole.
Meanwhile, we can handle the breadcrumbs: In a pan put 5 tablespoons of oil in which we put the breadcrumbs. Mix continuously because it burns quickly. When it gets a darker color, turn off the stove and add sugar, and mix until they are smooth.
Remove the pits from plums and sprinkle with 2 tablespoons sugar.
After the potatoes have boiled let them cool off. When they are cold, crush them with specific utensil, so do not use vertical mixer for it destroys the potato starch. After mashing the potatoes add flour gradually, 2 tablespoons oil and knead well until the composition can be processed. Even if the dough is still sticky, dust the hands with flour, so that the forming of dumplings gets easier, then you run the dough portion into equal parts. Take a piece of dough, flatten it and put a plum, then close them carefully and give them a round shape. Put them in hot water but not boiling and boil until they rise to the surface. Take them with a paddle with holes and put them immediately in the bread crumbs. It is important to put the dumplings in shifts, not all at once; to me they fit each 9-10 pieces. In this composition I obtained 28 delicious dumplings.
